Here I am again, apologizing for taking forever to post. Nothing new here. I’ve currently into this lovely new cycle when it comes to school. It goes a little something like this… go to class, come home and distract myself with a million and one things I don’t need to do until about 10 p.m., finally start doing homework that’s due in about 8 hours, sleep, hit my snooze button 15 times, finally get up, & repeat. Something tells me this needs to stop…Before this semester Rob deemed it the semester of fun and honestly so far it’s been more like the semester of afternoon naps and procrastination. But I guess I should get it out of my system now before I enter (cue dramatic music) “the real world.”
Come hell, high water, or hellish group assignments you know one thing for sure… I will find time to eat! And here’s what’s been on the menu!
Friday night sushi at Ronin
Tried out a new cupcake place in my hometown called Vanilla Bean
I was going in for one cupcake…this was Rob’s doing. The little ones on top were for the puppies!
An amazing FlatOut pizza creation! BBQ sauce, Gardein Chicken Strips, onions, peppers, and of course, cheese!
We made fish to get some protein! Soyaki tilapia, brown fried rice, and a piece of crazy bread!
I made Averie’s Vegan Sloppy Joes (minus the potato and broccoli) with zucchini fries and more crazy bread. This Rob, the food critic’s plate, he decided next time the carrot needs to be shredded, there needs to be black beans, and no served on a bagel with a whole in the middle. Sounds pretty picky for a man who didn’t have to make his own dinner, eh?
This is the lentil sloppy joes repurposed into FlatOut pizza…
And lastly, my personal favorite, lentil sloppy joe mix layered with sour cream and cheese to make the best layer dip ever. Next time I’m skipping straight to this stage! Seriously…make this for your Super Bowl Party!
My new obsession with Jimmy John’s lead me into my own sub making ventures. Jimmy John’s sells day old bread for $0.50 a loaf and seeing as all I like on my sub is cucumbers, provolone, and tons of lettuce I figured making my own would be cheaper than $6. I was right.

Last week we had breakfast in Deland with Rob’s mom and sister at Doug & Lil’s Potato Patch, it was a massive breakfast but it was worth it!
I made Banana Bread last week and this is going to my new go to recipe! With one addition, chocolate chips!
Yum! Turned out perfect! It was breakfast, midnight snacks, & even a sundae ingredient!
Last night I might have eaten this froyo from Mix before my actual dinner….whoops.
Rob and I shared a spicy sushi combo from Publix for lunch today. I like the shrimp and nothing else. He likes the salmon and tuna but not the shrimp…sometimes things work out like that.
My current on the go breakfast! Egg and cheese on an everything bagel thin! I think I’ll have this tomorrow to fuel up for class at 7:30, spin at 9:15, and then yoga at 10:30! Thursday is a productive day for some reason…
